3 Kickin’ Chicken BBQ Recipes to Spice up Your Summer

Chicken is one meat which lends itself well to barbecue season. It’s easy to cook and it’s also a great conduit for a variety of herbs, spices and marinades Because many people get somewhat nervous of cooking chicken on a barbeque, it’s a good idea to start it off in the oven and then use the barbecue to finish it off and ensure you get to enjoy that lovely smokey flavour which only a barbecue can impart!

Here are 3 simple and spicy BBQ chicken recipes which are simple to achieve even if you’re not an experienced cook.

Spicy Thai Drumsticks

A taste of the Orient is simple to achieve with the help of some Thai red curry paste!


  • 8 chicken drumsticks
  • Thai red curry paste (tbspn)
  • 2 garlic cloves crushed
  • Sweet chilli sauce (2 tbspn)
  • Grated zest of 1 orange plus 2 tbspn juice

Start your barbecue off and Preheat your oven to 200C/180C fan/gas 6 and line a tray with foil. In a bowl, mix all the ingredients apart from the chicken. Slash the meat of the chicken drumsticks to aid absorption of the marinade. Toss the drumsticks well in the bowl of marinade and then lay them on the foil-covered tray.

Tip the remaining marinade all over the chicken drumsticks and cook for 25 minutes. Now transfer the drumsticks to the barbecue grill and cook for a further 10 minutes. Serve with green salad and rice.

Spicy Chicken Ciabattas

This tasty recipe makes a refreshing change from a traditional burger and is filling enough to be served as a main with a salad.


  • 4 skinless chicken breasts
  • 1 ciabatta loaf
  • 1 clove garlic crushed
  • Romaine lettuce
  • Juice of 1 lemon
  • 1 tbspn smoked paprika
  • Dash of olive oil
  • 4 tbspn mayonnaise


With a very sharp knife, slice the chicken breasts in half horizontally and then lay them between sheets of Clingfilm. Now take a rolling pin and whack the chicken until it is around 1cm thick.

Drizzle each piece of chicken with lemon juice, dust with paprika and then add salt and pepper to taste. Drizzle each with a little olive oil and place on hot barbeque grill. Cook for 4-5 minutes on each side or until you are satisfied.

Half ciabatta horizontally and lay on hot grill for one minute. Now mix crushed garlic and mayonnaise and spread each slice of ciabatta with the mixture. Add a lettuce leaf and a slice of the chicken for each. Cut in half and serve with more salad.

Spicy Sweet Chicken Wings with Slaw


  • 1kg chicken wings
  • 200g radishes
  • 1 cucumber halved and sliced
  • 3 tbspn mango chutney
  • 4 or 5 tbspn mango curry paste
  • Bunch fresh mint
  • Juice of 1 lemon
  • Cooked rice to serve


Preheat oven to 200C/180 fan/gas mark 6 and turn on barbecue. In a large bowl mix the curry paste and half of the mango chutney. Toss the wings in this mixture and then place on a baking tray.

Roast for 35 minutes. Whilst they are in the oven prepare the slaw by combining the cucumber, sliced radishes, remaining chutney, lemon juice and mint. Add salt and pepper. When chicken has cooked for 35 minutes, transfer to the barbecue and cook for a further 5 to 10 minutes. Pile the wings onto a large plate with the chutney in a separate bowl. Rice can be served if desired.

Spicy chicken always goes down well at a barbecue and makes a nice change from plain, roasted chicken…offer a selection of rice, pasta and leaf salads in addition to crusty bread and butter and your guests will be very happy!
